Chicken and Bacon Stir-Fry With Veggies
If you’re looking for a delicious recipe that is full of nutrition, then look no further. This is a tasty, healthy recipe for a chicken and bacon stir-fry with veggies. Although you can replace and remove any of these ingredients to your liking, the original recipe will call for: 1 medium sized chicken breast, 3 strips of bacon of your choosing, 5 small golden potatoes, 6 stalks of medium sized asparagus (not too thick, but not too thin either), 10 baby carrots, some salt and pepper, some garlic powder, and finally, 1/3 a cup of canola oil.
First of all what you’re going to want to do is prep all of the ingredients. For the chicken breast you should just cut it into chunks sized to your liking. The strips of bacon should be cut into thirds, and the small golden potatoes should be cut into fourths. You’re going to want to cut the asparagus into thirds after breaking off the back end, and finally you should cut the baby carrots in half. You should season the chicken with salt, pepper, garlic, and thyme before you start cooking.
After you have all of your prep done you finally get to start cooking and sending smells of great food throughout your kitchen. First what you’re going to want to do is bring a large saute pan to a medium high heat on one burner, and another large saute pan to a medium heat on another burner. Once your pans have reached the desired temperature you will want to fry your bacon in the medium temperature pan until it is about half way cooked. This will allow your bacon to come out crispy even though you are cooking it in a stir fry. While your bacon is frying you should be heating up your 1/3 of a cup of Canola Oil in the pan that is on a medium high temperature. Once your bacon has reached the desired half way mark you will want to then add your bacon, chicken, and small golden potatoes into the canola oil pan all at once. The chicken, bacon, and potatoes take a longer time to cook than the veggies do, so you will want to cook these for about five minutes before adding your other ingredients. Sprinkle a generous amount of salt, pepper, and garlic powder into the pan after you have put all of your ingredients in. Make sure that you are stirring this dish in the pan periodically starting from when you put your chicken, bacon, and potatoes in until you are done cooking the meal. Also be sure to flip your ingredients over regularly as best as you can so that one side doesn’t get cooked more than the other. Once you get your veggies into the pan you will want to keep cooking this stir-fry until your potatoes and carrots are done (you should be able to put a fork in them with ease), and your chicken is fully cooked (cut the chicken open and make sure there is no pink inside). This should take about ten minutes. Once this has been done you can strain the remaining canola oil from the pan and begin plating your dish.
At this point your food should be cooked to the desired temperature and texture, and you should be well on your way to enjoying a delicious meal. With the prep time being only about fifteen minutes for a moderately experienced cook, and the cook time being only about fifteen to twenty minutes, you can have yourself a delicious meal in no more than forty five minutes! This recipe will produce one large serving but the great thing about this recipe is that if you want to serve more people you just have to double or triple the ingredients as needed.
